Preferred width/height don't "ovrride" flexible ones
To reproduce:
1. Open attached project
2. Open test scene
3. Select "Right" game object (Canvas -> Panel -> Right)
4. Notice that preferred width is set to 50
5. Select Flexible Width and enter 0
6. Preferred Width does nothing unless you explicitly set Flexible Width to 0
Workaround: Set Flexible Width to 0.
