If you have any UI issues on Android with Unity 5, make sure your camera's Clear Flags setting is not set to 'Don't Clear'.
If you set it to Solid Color, UI should look fine.

I get visual artifacts on Android building with 5.0.0f4 with Unity's UI, no matter what OpenGL version is used.
