[UI] Ambient lighting doesn't affect colored UI Text
Steps to reproduce:
1) Open the attached project (TextLighting.zip).
2) Open the scene 'Example.unity'.
3) Enter playmode.
- Notice how the text which has its color set to white is illuminated.
4) Turn off the 'Directional Light' in the scene.
- Notice that the text is now black.
Expected result: the text stays white after disabling the light.
Actual result: the text loses its color.
