Rect Transform rotation animation curve is quaternion and not euler
To reproduce:
1. Create a new Canvas with a button
2. Select the button and open the animation window
3. Add a new curve, create a new animation
4. Select the Rect Transform rotation curve
5. Note that the curve has 4 parameters - it's quaternion, not euler
(In the inspector it's euler)
You could animate the euler values of the transform in 4.6.0b6
