overrideSprite is being set to null when no longer hovering on Image
To reproduce:
1. Open my project attached (SpriteOverrideRepro), scene "case_1082037-BugExampleScene"
2. Enter Play mode
3. Click The white button - sprite changes to overwritten one
4. Unhover the cursor from the button
Expected: Sprite is still being overwritten
Actual: overrideSprite is set to null on hover exit
Reproduced in: 2017.4.11f1, 2018.1.9f2, 2018.2.9f1, 2018.3.0b2, 2019.1.0a1

Resolution Note (2019.1.X):
The button has sprite transition mode enabled. Sprite transition mode uses the override sprite. If you wish to stop this then you should use a different transition mode.
