Asset Reference Overrides don't handle subassets when saving the overrides in the UI Builder
How to reproduce:
1. Open the “AssetRefOverride.zip“ project
2. Open the “SampleScene“
3. Open the “DocumentWithOverrides.uxml“ file in the Assets folder
4. Select another Asset for the “Test Asset” field for each element
5. Save the changes in the UI Builder
6. Observe the “Test Asset“ fields in the Inspector of each Element in the Hierarchy in UI Builder
Expected results: The “Test Asset“ fields are overridden, and display the selected Asset when the changes are saved in the UI Builder
Actual results: The “Test Asset“ Asset is still what it was when first opened
Reproducible in: 2023.2.14f1, 2023.3.0b10
Could not test in: 2021.3.36f1, 2022.3.21f1 (Different UI Builder layout and no “Test Asset” field in the Inspector)
Reproduced on: Windows 11 Pro (23H2)
Not reproduced on: No other environment tested
