UnityLinker enable logging does not work when path doesn't already exist
Reproduction steps:
1. Open user attached Solution
2. Change Path variable accordingly
3. Run All Tests
Expected result: The Tests succeed
Actual result: The Tests fail
Reproducible with: 2020.3.14f1, 2021.1.14f1, 2021.2.0b2, 2022.1.0a2
Could not test with: 2019.4 (No DLL)
