It's impossible to set UnityEngine.UI.Text`s Vertical Overflow setting from script. There is no property at Text.

There are no script bindings for both Vertical and Horizontal overflow settings, although these are exposed in the Inspector. I'd expect an enum.
Still unresolved in 4.6.0b20. Bug was marked as resolved here, but only line spacing and not overflow settings were addressed: http://issuetracker.unity3d.com/issues/ui-dot-text-has-no-property-for-getting-or-setting-linespacing-ver-slash-hor-overflow-even-though-it-is-editable-in-the-inspector
